I should add that I am in a warm climate, it is easily 25-28 degrees most of the time. So I don’t think heat is the issue.

It is showing all the right signs – bubbles, different smells over the course of 12 hours – but it WILL not rise using your maintenance recipe. I tried a more ‘stiff’ starter (just guessing the ratios) and that rose! So I think my starter is alive, but is too liquid to rise. Is it OK to bake with now?

That’s just my typical feeding routine, I leave 20g in the jar each day. At that point, you can do whatever maintenance procedure you’d like.
