And I’ve been using the “wrap the dough in a seeded towel” method. I place a clean towel on the table, dust a bit of rice flour on it, followed by teff seeds. Then I shape my dough, spritz it with water on the top and place it top down on top of the seeded towel. Then I wrap the dough baby in the towel and drop it into the banneton (which actually is a cheap basket from IKEA that’s narrower than any banneton I’ve seen). Than it goes into the fridge overnight. Works for me! 😉

Sunflower is a tad harder in some cases. I would try sticking the sunflower first, then the poppy. You might want to slightly press the dough into the sunflower seeds to get them to adhere.

That’s interesting Marlene! I usually only do an egg was before scoring because afterward means the wash might seep into the cut areas. If you’re careful I could see that not happening, though!

Yes, I have used millet! For both, as a mix-in and a topper. I would not (and did not) soak the millet for topping, but for the interior, I cooked it a bit into a porridge. Check out my millet porridge sourdough recipe. For the topping, no need to soak or cook, they’ll toast on the outside.
